Ingredients1/4 cup of olive oil
2 tbsp freshly squeezed lime juice
1 clove garlic, minced
1/2 tsp sugar
2 tbsp of olive oil
1 tbsp fresh coriander, chopped
Salt and pepper
4 Savori Pico de Gallo sausages, cut into 1-inch slices
200g Haloumi cheese, cut into ¾-inch cubes
2 medium zucchinis cut into ½-inch slices
1 red onion cut into ¾-inch cubes
12 cherry tomatoes
MethodIn a large bowl, combine lime juice, garlic, sugar, olive oil and coriander. Season to taste with salt and pepper.
Add the sausages, cheese, zucchinis, onions, tomatoes and mix well.
Preheat the grill to medium.
Thread skewers alternately with sausages, cheese and vegetables. Reserve remaining vinaigrette in the bowl.
Place the skewers on the grill and cook for 3 to 5 minutes on each side, until they are nicely browned. Serve on a platter and drizzle with the rest of the vinaigrette.
