Ingredients1 red, 1 orange and 1 yellow bell pepper, seeded and cut into strips
1 red onion, cut into ¼-inch slices
2 potatoes, cut into 1-inch cube
5 1/2 tsp olive oil, divided
4 Savori Tuscany sausages, cut into ½-inch slices
1 tbsp red wine vinegar or balsamic
3 cups of arugula (optional)
1/3 cup crumbled feta cheese or sliced parmesan cheese
MethodWith the rack in the middle position, preheat the oven to 425°F.
On a large rimmed baking sheet, toss the potatoes with 2 tbsp of olive oil, salt and freshly ground black pepper. Bake 15 minutes.
Meanwhile, mix bell peppers with 1 tbsp of olive oil. Season with salt and pepper. Toss the potatoes and add the peppers and sausage slices around the potatoes. Bake another 15 to 20 minutes, stirring once, until vegetables are golden brown. Meanwhile, mix 1 ½ tbsp. of olive oil with red wine vinegar. Sprinkle vegetables and sausages with oil mixture, season with salt and pepper.
If using, divide the arugula into 4 plates and drizzle with olive oil and vinegar. Garnish each plate with the vegetable and sausage mixture and finish with the feta or parmesan cheese. Serve.
